What it does

Sodium citrate works alongside citric acid as a buffer: together they hold a product at a chosen pH so it stays stable and mild. It also binds metal ions, which helps preservatives and foam. CosIng lists it as buffering and chelating.

It is made by fermentation and affects none of the six checks.
