What it does

Betaine (trimethylglycine) is extracted from sugar beet molasses. In shampoos and cleansers it makes the foam feel gentler; in creams and toners it holds water in the skin.

CosIng lists it as humectant and hair and skin conditioning. It is plant-derived and affects none of the six checks; it is not related to cocamidopropyl betaine despite the similar name.
